Hej og tak for en fantastisk site. I "verdens bedste brød" kommer du salt og mel i vand med gær hver for sig med først salt og derefter mel. Her blander du først salt i mel. hvad er bedst ? mvh en fanSMAG?

Kringlebach har en saltlag opskrift med porter. Jeg vil prøve den til pulled pork snart. Min pulled pork opskrift er med en dry rub.
- 3 tablespoons brown sugar
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 1 tablespoon cumin
- 1 tablespoon salt
- 1/2 tablespoon coriander
- 1 teaspoon thyme
- 1 teaspoon dried mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne
- 1/2 teaspoon black pepper
Apply whichever rub you chose generously allllll over the pork butt. Get it in all the nooks and crannies. After it's been properly pampered, place it on a sheet pan and cover with plastic wrap. Put this in the fridge over night.
(For real, the whole night. You can start cooking first thing in the morning and hopefully be able to eat it by dinner!)
There are the seven commandments for getting perfect pulled pork from your oven:
1. Apply a good amount of dry rub and let it sit in the fridge overnight.
2. Cook the pork butt on top of a baking rack on a baking sheet - this will allow a crust to form all the way around and let the excess fat render off
3. I like to pour 1-2 cups of water onto the baking sheet to help keep a little moisture in the oven.
4. Use a probe thermometer with a temperature alarm set to go off at 79 C. Make sure the probe thermometer is in one of the thickest parts of the meat .
5. Cook it at 210 C for the first hour for fillets that are 6 pounds and over - under that only do it for a half hour.
6. After the first round of cooking at 210 C, turn the heat down to 120 C and let it cook until it reaches 79 C.
7. Remove from the oven and let it rest, covered with aluminum foil, for at least 30 minutes. Keep in mind that cooking times will vary depending on how heavy your pork butt is - a rough estimate is at least an hour per pound. The pork fillet I cooked took 8 hours - they cooked from 10 to 17:30.
